No-Churn Coffee Brownie Ice-cream
Prep time: 15 minutes
Rest time: 6 hours
Total time: 6 hours, 15 minutes
2 cups heavy cream
3/4 cup sweet condensed milk
2 Tbsp instant coffee granules
1/2 Tbsp vanilla extract
1 cup chocolate brownies pieces (homemade or store bought)
1. In a large mixing bowl, whip the chilled heavy cream using an electric mixer on medium-high speed until stiff peaks form. This usually takes about 3-4 minutes.
2. Gently fold in the sweetened condensed milk, instant coffee, and vanilla extract into the whipped cream using a spatula. Make sure to combine them thoroughly, but be careful not to over mix and deflate the whipped cream.
3. Now, it's time to add the star of the show – the fudgy brownie pieces. Fold them into the ice cream base, ensuring an even distribution of the brownie chunks.
4. Transfer the mixture into a freezer-safe container, spreading it evenly. Place it in the freezer. Allow the ice cream to freeze for at least 6 hours or overnight until it reaches a firm, scoop-able consistency.
5. Once the ice cream is fully frozen, it's ready to be enjoyed. Scoop generous portions into bowls or cones and savour the creamy coffee goodness studded with delectable brownie pieces.
