Every year during our summer break weekends, my mom and grandma would host summer BBQs, and it was always a treat to try the different flavors of falooda they made. As a child, I eagerly awaited those weekends, especially for the mango falooda they prepared. Each sip felt like my taste buds were transported to dessert heaven, providing a cool and refreshing sensation during those scorching hot summer days. Mango falooda begins with delightfully sweet mangoes blended with chilled milk, saffron, ground cardamom and sweetened condensed milk creating a rich and creamy base. As you take a sip, the fruity sweetness of the mango dances on your palate, leaving a burst of delightful flavours. But that's not all! The addition of falooda sev, delicate vermicelli noodles, brings a playful chewiness to each spoonful. As you twirl your spoon, the noodles intertwine with the mango-infused milk, creating a delightful interplay of textures.
For an added twist, the falooda is topped with a little homemade jello (totally optional) and sweet basil seeds, also known as sabja seeds, providing a delightful crunch and a subtle pop with every bite. These tiny seeds bring a refreshing twist and add a touch of sophistication to the dessert.

1 cup milk (almond milk)
1 Tbsp sweet condensed milk
1 tsp ground cardamom
1/2 Tbsp saffron strands
1/4 cup falooda sev (vermicelli)
1/4 cup mango or strawberry jello (optional)
2 Tbsp basil seeds (soaked with 1/4 cup water)
2 scoops vanilla ice-cream
A few mango pieces
1. In a blender, blend the diced mangoes, milk, cardamom, saffron and condensed milk until smooth and creamy. Set aside.
2. Cook the falooda sev according to the package instructions. Once cooked, drain and rinse with cold water to remove any excess starch.
3. Soak the sweet basil seeds in water for about 5 minutes until they swell up and become gelatinous.
4. In serving glasses, layer a few mango pieces, falooda sev at the bottom, strawberry jelly pieces followed by a spoonful of sweet basil seeds. Pour the mango milkshake mixture over.
5. Add a scoop of vanilla ice cream on top of each glass. Garnish with chopped nuts and mango pieces.
6. Serve chilled and enjoy the refreshing and creamy Mango Falooda.
