Healthy Chocolate Banana Bread

Prep time: 10 minutes

Rest time: 1 hour

Bake time: 50 minutes

Total time: 2 hours

Servings: 8


Ingredients:

2 eggs (8 Tbsp yogurt)

180g Oat flour

60g cocoa powder (unsweetened)

260g jaggery or coconut sugar

1 tsp baking powder

1 tsp baking soda

1 tsp corn starch

1 tsp vanilla extract

140ml buttermilk

130g banana mashed (1 medium sized banana)

75ml vegetable oil or melted butter


Directions:

1. Preheat the oven at 325F and line a baking pan (I've used 8" loaf pan), with butter and parchment paper.


2. In a bowl whip the egg, vanilla extract and jaggery. Add banana pieces and mash using a whisk. Add the remaining ingredients to the bowl. Mix until a homogenous mixture forms. Fold half of the chocolate chips into the batter.


3. Transfer the batter to a prepared pan, top with the remaining half chocolate chips and bake for 50-55 minutes or until an inserted wooden skewer comes out clean.


4. Remove from the oven and rest for 1 hour. Serve and enjoy!


Note: The cake can be stored in an airtight container and kept refrigerated for up to 1 week.
