Blueberry Vanilla bean Galette
Prep time: 5 minutes
Bake time: 25 minutes
Rest time: 10 minutes
Total time: 40 minutes
1 cup blueberries
1/4 cup granulated sugar
1/2 Tbsp corn starch
1 tsp vanilla bean paste
1 tsp lemon juice (optional)
6 puff pastry sheets (store bought individual sized or 1 big one)
1. Preheat the oven to 350 F.
2. In a medium bowl, combine the blueberries, granulated sugar, cornstarch, vanilla bean paste, and lemon juice.
3. On a lightly floured surface, roll the puff pastry a little and shape it by folding the edges up with your fingers, around a 1 inch border. Place the pastry on a parchment lined baking sheet and arrange the blueberries over the pastry. Brush the edges off the pastry with egg and sprinkle with coarse sugar. Transfer to the oven and bake for 20-25 minutes or until golden brown.
4. Let cool slightly and serve with vanilla bean ice cream. Enjoy!
